Chopping and Mixing

Today is a day of recipes. I felt like "putzing" around the kitchen in between knitting. The first thing I made was an appetizer dip you can get from a local restaurant. The recipe was published in the newspaper several months ago. It is so yummy and great to have on hand with some Ritz crackers. Here's the recipe:

@pple @nnie's Appetizer Dip

2 (8-ounce) packages cream cheese, softened at room temperature
1/3 cup scallions (green part only), finely chopped
1/3 cup green bell peppers, finely chopped
1 cup crushed pineapple in syrup, drained well
1 cup pecans, chopped fine in food processor
1 tablespoon seasoned salt
Crackers

Add cream cheese, scallions, peppers, pinapple, pecans and seasoned salt to bowl of mixer. Mix well to a smooth consistency. Serve with your favorite crackers. Store dip in refrigerator.

Makes about 4 cups.
